Carbonada Uruguaya / Uruguayan Beef Stew with Vegetables and Fruit.

Wow, It has been so long since I written anything in here.
But I am back now and with that I am going to share a new dish I tried yesterday.
I have been sick for a few days with a nasty cold that won't go away and I was craving for a warm, home cook meal so I decided to make a stew, but I wanted to try a different kind and found this recipe for a Carbonada Uruguaya which is basically Uruguayan Beef Stew with Vegetables and fruit, yes fruit and let me tell you, it is delicious.

I learned that Carbonadas are for Uruguayans what paellas are for spaniards, it is believe this dish was created by the Basques, who are known to using fruit in savory dishes, a tradition left in Spain by the Arab occupation, but not only in Uruguay they use fruit, in my native Venezuela , the most typical salty dishes include fruit, in some form or another.

So here it is.

Uruguayan Beef Stew with Vegetables and Fruit.



What you need:

2 tablespoons of fat, I used bacon fat (because its the best and most delicious thing ever) but you can use whatever you want.
1 cup of flour.
2 small onions or 1 large one , chopped about 2 cups.
1 medium sized green bell pepper, seeded and chopped.
6 cloves of garlic, minced. (yes 6, what can I say, I am spanish and love garlic)
2 pounds boneless beef sirloin cut into 1 1/2-inch cubes.
1 bay leaf.
1 tablespoon of fresh oregano or 1 teaspoon of dried.
1 tablespoon of fresh thyme or 1/2 teaspoon of dried thyme.
1/2 teaspoon freshly ground black pepper.
1 teaspoon salt.
One 16-oz can diced tomatoes with juices.
2 cups beef broth.
2 ears corn, cut into 1-inch thick rounds.
8oz butternut squash, peeled, seeded, and cut into 1-inch cubes.
8oz potatoes, peeled and cut into 1-inch pieces.
8oz sweet potato, peeled and cut into 1-inch pieces.
2 large ripe but firm Bartlett Pears, peeled, cored and cut into 1-inch pieces.
2 large ripe but firm peaches, peeled, pitted, and cut into 1-inch pieces.


  • What to do with it:
In a bowl or plate, mix the flour with salt and pepper to taste and gently rolled the meat pieces in the flour, shake any excess and put aside.


In a heavy pan (I used a Dutch oven) heat the fat medium to high heat and brown the meat pieces, stirring frequently and shaking the pan to prevent scorching, make sure to not overcrowd the pan, if necessary you can brown the meat in batches, when all the meat is done cover and put aside.
We don't want to cook the meat , just caramelized it.



 Add the onions to the hot pan, green peppers, and garlic  and cook until the onions are transparent, for about 3 minutes. (Here is when you should open the windows to avoid getting the onion and garlic smell all over your house and clothes, do it at your own risk but if people start running away from you, don't say I didn't warn you).




Add the meat, bay leaf, herbs, salt and pepper and cook for about 5 minutes (don't forget to stir a few times). 


Add the tomatoes with the juice and the beef broth, bring to a boil, cover, reduce the heat to low and simmer until the meat is tender for about 1 hour.


After the meat is tender, remove the bay leaf if you want. Add the corn, squash, potato and sweet potato to the pan and cook until tender, for about 15 min. 





Add the pear and peaches. If the juices in the pan have dried up you can add more beef broth, there should be plenty of sauce to cover the meat and vegetables. Heat the fruit through and taste seasoning. Serve hot with rice.

Al fin! Tenía mucho tiempo sin escribir en mi blog, pero ya regrese y voy a compartir con ustedes un plato Uruguayo que consegui.
Resulta que tengo dias enferma con una gripe que no se quiere ir, y ayer tenia antojo de comerme algo caliente, casero, comida de tu mamá como dicen muchos y me provocó preparar un estofado, pero queria una receta diferente así que me puse a buscar y conseguí esta que se llama Carbonada Uruguaya y lo que más me gustó es que lleva frutas y como tipica Venezolana, me encanta la comida salada que tenga un toque dulce.

Estuve averiguando y aprendí que la Carbonada es tan común en Uruguay como lo es la Paella en España, se cree que el plato fue creado por los Vascos que se conocen por usar frutas en platos salados, una tradición que dejaron los Árabes cuando ocuparon España.

Bueno, aca les dejo la receta y espero les guste.

Carbonara Uruguaya:




Lo que necesitan:

2 cucharadas de manteca o cualquier tipo de grasa, yo use grasa de tocineta(porque? porque es lo más divino que hay)
1 taza de harina de trigo.
2 cebollas pequeñas o 1 grande picada, aprox. 2 tazas
1 pimiento verde mediano picado y sin semillas.
6 dientes de ajo, picaditos. (si, 6 dientes de ajo, que puedo decir, soy española y me gusta el ajo).
2 libras (900 gramos) de carne de res, deshuesada y cortada en cubos de 4 cm aprox, preferiblemente lomito pero cualquier corte sirve ya que se va a cocinar a fuego lento.
1 hoja de laurel.
1 cucharada de orégano fresco o 1 cucharadita de oregano seco.
1 cucharada de tomillo fresco o 1/2 cucharadita de tomillo seco.
1/2 cucharadita de pimienta negra.
1/2 cucharadita de sal.
Una lata 16-oz (473 ml) de tomates picados, con su jugo.
2 tazas de caldo de res.
2 mazorcas de maíz cortadas en rodajas de aprox. 1 cm de grosor.
1 taza de auyama (Calabaza, ayote) pelada, sin semillas y cortada en cuadros de 2 cm.
1 taza de papas, peladas y cortadas en cuadros de 2 cm.
1 taza de batatas (boniato, papa dulce, camote), pelada y picada en cuadros de 2 cm.
2 peras maduras pero firmes, picadas, sin semillas ni centro y cortadas en cuadros de 2 cm.
2 melocotones (durazno) maduras pero firmes, pelados, sin la semilla y cortados en cuadros de 2 cm.

Que hacer con esto:

En un plato, mezclar la harina con sal y pimienta al gusto y cubrir los pedazos de carne con la harina, sacudir cualquier exceso y poner aparte.


En una olla grande (yo use un horno holandés ,que no es lo mismo que un holandés en el horno, jajaja que chiste tan malo), calentar la grasa a temperatura mediana-alta y dorar las piezas de carne, moviendolas a menudo para que no se quemen y asegurándose de no poner muchas en la olla, hacerlo por partes. Cuando la carne esté dorada,  ponerla en un plato aparte y guardar para luego. No queremos cocinar la carne, solo caramelizar.



Ahora agregar la cebolla, pimiento verde y ajo a la olla y cocinar hasta que la cebolla esté transparente, por 3 minutos más o menos. (aca es cuando deberias abrir las ventanas para que la casa y tu ropa no agarre olor a cebolla y ajo....hazlo a tu propio riesgo pero si la gente huye de ti luego no digas que no te advertí)
 



Ahora si puedes agregar la carne que tenias guardada que se que ya te has comido unos pedacitos supuestamente para "probarla", lo que te quedo de carne ponlo en la olla con la hoja de laurel, las hierbas, sal y pimienta y cocina por 5 minutos revolviendo unas veces.


Agrega los tomates con su jugo y el caldo de res, lleva a un hervor, cubre, reduce el calor a mínimo y déjalo cocinando por 1 hora hasta que la carne esté blandita.



Cuando la carne haya ablandado, saca la hoja de laurel si quieres, agrega el maíz, la auyama, papa y batata y cocina hasta que estén suaves por 15 minutos aproximadamente.







Y de último agrega las peras y melocotón. Si el líquido se ha secado mucho puedes agregar más caldo de res, lo ideal es que haya suficiente líquido para que cubra la carne y vegetales. Calentar la fruta y servir caliente acompañado con arroz blanco.
