Sugar / Azucar




SUGAR, oh! delicious Sugar we all love it, some of us are addicted to it.

Last weekend a neighbour gave me lots of Nectarines, too many to eat before they overripe so I decided to make two desserts, one was Nectarines marinated in Cointreau and sugar, topped with Caramel Sauce and Whipped Cream yes, A-MAZING, and the other one was a Nectarine upside down cake, also super delicious, but the thing is that these two desserts (like most of them) used a lot of sugar, brown and white, which of course makes it even more delicious but it also opened my eyes on how much sugar I was consuming because of these Nectarines.

I have a National Geographic Magazine Subscription and the magazine’s main article for  the August 2013 issue was about SUGAR and why we can’t resist it. 

I received the magazine the day I made all this sugar-full desserts. Was it coincidence? or was it the universe sending me a message, trying to open my eyes about how much sugar we all consume daily?
 I think it was just bad timing, but I decided to write some facts about sugar and why we should , if we could (some of us can’t) reduced our sugar comsumption or stop eating it all together.

The moment I got the magazine, read the front cover and saw the big cupcake picture, my first thought went to my husband who is addicted to sugar and my second was “Ummm! cupcakes, I would love to eat a Red Velvet with Cream Cheese Frosting right now......Drooling"..But then I started reading the article and my craving stopped.
and here is why:

Candy: Americans spent $32 billion on sweets in 2011; per capita consumptions was 25 pounds. Formerly a luxury item for the rich, candy became affordable with the decline of sugar prices and rise of mass production in the 19th century. The word itself comes from qandi: Arabic for sugar confection.




Did you know New York City schools cracked down on baked goods in 2009 as part of a wellness policy? Good for them.

Cupcakes: The downsized cake made its American cookbook debut in 1826. Cupcake gentrification spread in 2000 when Sex and the City’s Carrie Bradshaw nibbled one topped with pink buttercream. (not only did she put Manolo Blahnik shoes on the map but also cupcakes).



Soda: In the 18th century it was discovered that carbon dioxide put the fizz in fizzy water. This let to the production of soda water, then to sweet drinks like root beer, ginger ale, and cola. Today’s 12-ounce soda typically contains around ten, that is 10 teaspoons of sugar.

22.7 Teaspoons a day. This is how much sugar the average American eats each day. Even without dipping into a sugar bowl, it’s not hard to hit the total because of the sugars in processed foods. Though sugar consumption has dropped since 1999, we’re still wildly exceeding the recommended limit.

Sugar added to processed foods enhance flavor and texture. They also act as a preservative to extend shelf live.

Types of added sugar consumed, U.S daily average:

SUCROSE:
(11.6 tsp, 51%), Granulated cane or beet sugar is stirred into coffee and tea, used in baking and consists of 50% Fructose and 50% Glucose.

HIGH-FRUCTOSE CORN SYRUP:
(8.2 tsp, 36%), Made cheap by government corn subsidies, it was first added to processed food in the 1970s and consists of 55% Fructose and 45% Glucose.

OTHER SWEETENERS:
(3 tsp, 13%), Honey, Maple syrup, and Molasses have slight traces of vitamins and minerals.



Now, remember this:
1tsp = 4.2 g
  • Beef and Pork bologna, 4 slices. 1.18 tsp sugar.
  • Wheat bread, 2 slices, 0.66 tsp sugar
  • Lucky Charms Cereal, 1 cup, 2.55tsp sugar
  • Ketchup, 3 tbsp, 1.77 tsp sugar
  • Oreo Cookies, 3 cookies, 2.49 tsp sugar
  • Low fat fruit yogurt, 8 oz, 6.16 tsp sugar
  • Can of cola, 12 oz, 7.93 tsp sugar
For a total of 22.74 tsp of sugar.

22.7 Teaspoons equals the natural sugar contained in each of the following: 7 red apples, 454 eggs, 1,135 cups of rice, 27 ears of corn.

According to the American Heart Association, the maximum amount of added sugars you should eat in a day are:

Men: 150 Calories per day (37.5 grams or 9 teaspoons)
Women: 100 calories per day (25 grams or 6 teaspoons)

However, some people can eat some sugar without harm, while others should avoid it as much as possible. If you are healthy, lean and active you will probably burn off these small amounts of sugar without them causing you much harm but its important to note that there is not need for added sugars in the diet. They don’t serve any physiological purpose, the less you eat, the healthier you will be 

If you are addicted to sugar like my dear husband is , then you should (in a perfect world) avoid it completely. Sugary junk foods stimulate the same areas in the brain as drugs, for this reason, sugar can cause people  to lose control over their consumption.

Drink water instead of soft drinks or fruit juices (which actually contains the same amount of sugar as soft drinks), don’t add sugar to your coffee or tea if you can which is hard for me because I think sugarless coffee is so gross.

In a lot of recipes you can substitute sugar with things like cinnamon, nutmeg, almond extract, vanilla, ginger or lemon, of course if you are baking a cake, don’t you dare adding 1/2 a cup of cinnamon instead of that 1/2 cup of sugar it calls for because that will be just wrong, so wrong.

Keep this in mind

There are many different names of sugar: Sugar, sucrose, high fructose corn syrup, dehydrated cane juice, fructose, glucose, dextrose, syrup, cane sugar, raw sugar, corn syrup, etc, etc.
If a package food contains sugar in the first 3 ingredients, avoid it, run for your life.
Be aware that other sugars often labelled healthy like agave, honey, organic cane sugar and coconut sugar fall into the same category.




So, did I scare you? I probably didn't, so go, go ahead and finish that Grande Caramel Macchiato with its 32g of sugar or go be one of those people that  I see at the mall's food court that are sooooooo overweight and they have 5 year old kid that look like he's 10 because this kid is overweight and they are consuming a large coke and eating a huge Ice Cream and then they wonder why, oh why they can't seem to lose weight and in the mean time I will go to the Cupcake store and get me a big Red Velvet Cupcake with Cream Cheese frosting that will make me feel sick immediately after eating it because of my lack of Gallbladder but it will be oh sooo worth it.!!!

AZUCAR, deliciosa Azúcar que a todos nos gusta y muchos de nosotros somos adictos a ella.
La semana pasada un vecino me regalo muchísimas Nectarinas (parecidas al durazno pero la piel es mas gruesa, es lisa, no aterciopelada, la fruta es mas firme y acida), eran muchas para comernolas antes de que se pudrieran así que decidí preparar dos postres, uno fue Nectarinas marinadas en Cointreau y azúcar  con almíbar de caramelo y crema batida, quedaron INCREIBLES de lo buenas, y el otro postre fue una torta (pastel) de Nectarinas que también quedo de muerte lenta. Pero preparándolos, me di cuenta de la cantidad tan grande de azúcar blanca y morena que llevan estos postres, (como la mayoría de ellos), que me abrió los ojos a la cantidad de azúcar que estaba consumiendo , todo por unas nectarinas que no quería que se pudrieran.
Yo tengo la suscripción de la revista National Geographic y el articulo principal de la edición de Agosto 2013 fue de Azúcar y porque no la podemos resistir.

Recibí la revista el día que prepare esos dos postres full de azúcar. Fue coincidencia? o será que el universo me estaba tratando de mandar un mensaje para que abriera los ojos y ver la cantidad de azúcar que todos consumimos a diario? Yo pienso que fue una mala coincidencia pero igual decidí escribir acerca del azúcar y porque deberíamos, si tan solo pudiéramos (se que muchos de nosotros no podemos) reducir nuestro consumo o eliminarlo por completo de nuestras vidas.

En el preciso momento que recibí la revista, leí la portada y vi la foto de un ponquecito, lo primero que pensé fue en mi esposo quien es adicto a el azúcar y mi segundo pensamiento fue "Rico!!! ponques, como me provoca uno de chocolate con crema de mantequilla por encima...salivando". Pero luego empece a leer el articulo y mi antojo desapareció y acá les diré porque:

Caramelos: Los Americanos gastaron $32 billones en dulces en 2011; el consumo por capita fue de 25 libras. Anteriormente considerado un articulo de lujo para los ricos, los dulces se hicieron asequibles con el declive de los precios de el azúcar y el aumento de la producción en masa en el siglo 19. 



Tu sabias que las escuelas localizadas en la Ciudad de Nueva York eliminaron productos como panes, tortas, pasteles de sus cafeterías en 2009 como parte de una nueva política de salud y bienestar? Me parece un ejemplo a seguir.


Ponquecitos (Cupcakes): Esta pequeña torta hizo su debut estadounidense en libros de cocina en 1826 pero se hizo súper famosa en el 2000 cuando, en la seria de TV Sex and the City, el personaje de Carrie Bradshaw mordiera una con crema de mantequilla rosada. (así que ella no solo puso los zapatos del Español y Canario Manolo Blahnik en el mapa pero también los ponquecitos).



Soda:  En el siglo 18 se descubrió que el Dióxido de Carbono, al agregarse al agua, causaba la efervescencia. Este descubrimiento empezó la producción  de agua con gas, luego a las bebidas dulces como Root Beer, Cola, Ginger Ale. Hoy en dia un refresco de Cola de 12 oz contiene alrededor de diez, si 10 cucharaditas de azúcar.

Esta es la cantidad de azúcar que el estadounidense promedio consume cada día, incluso sin que se sumerjan en un bol de azúcar y no es difícil llegar a este total debido a el azúcar en los alimentos procesados. Aunque el consumo de azúcar ha disminuido desde 1999, todavía consumimos mucho mas que la cantidad limitada recomendada.

El azúcar añadido a los alimentos procesados mejora el sabor y la textura, y también actúa como un conservante para extender el tiempo de vida del producto.

Tipos de azúcar consumida al dia en U.S. 
SACAROSA:
(11.6 cdtas, 51%), Caña de azúcar granulada  o azúcar de remolacha, se usa en tes y cafes, en tortas, galletas y demás y contiene 50% Fructosa y 50% Glucosa.

ALMIBAR DE MAIZ DE ALTA FRUCTOSA:

Ahora, toma en cuenta esto:

  • Cereal Lucky Charms, 1 taza, 2.55 cdtas de azúcar
  • Ketchup, 3 cdtas, 1.77 cdtas de azúcar
  • Galletas Oreo , 3 galletas, 2.49 cdtas de azúcar
  • Yogurt de frutas bajo en grasa, 8 oz, 6.16 cdtas de azúcar
  • Una lata de Cola, 12 oz, 7.93 cdtas de azúcar

Para un total de 22.74 cdtas de azúcar.

22.7 cucharaditas de azúcar natural es el contenido en CADA uno de lo siguiente: 

7 Manzanas rojas, 454 huevos, 1,135 tazas de arroz, 27 mazorcas de maíz

De acuerdo a la Asociación Americana del Corazón, la cantidad máxima de azúcar que deberíamos consumir a diario es:

Hombres: 150 Calorias por dia (37.5 gramos o 9 cucharaditas)
Mujeres: 100 Calorias por dia (25 gramos o 6 cucharaditas)


Sin embargo algunas personas pueden comer algo de azúcar sin que les cause daño, como otras deberían evitarlo por completo. Si tienes buena salud, eres delgado y activo probablemente puedes quemar el azúcar de tu cuerpo sin que te cause muchos problemas de salud pero es importante tener en cuenta que nuestro cuerpo no necesita azúcar en nuestra dieta, no sirve ninguna función fisiológica, mientras menos consumas, mas saludable estarás.

Si eres adicto a el azúcar, como mi adorado esposo, entonces deberías (en un mundo perfecto) evitarla por completo. Comida azucarada estimula las mismas áreas del cerebro que las drogas, por esta razón, el azúcar puede causar que la gente pierdan control sobre su consumo.


Toma agua en vez de colas o jugos de frutas (que tienen las misma cantidad de azúcar que las colas), no le agregues azúcar a tu cafe o te, si puedes, se que es difícil , por lo menos para mi que me parece que cafe sin azúcar es horrible.

En las recetas que puedas, sustituye azúcar por especias como canela, nuez moscada, extracto de vainilla y almendra, gengibre, limon, etc, por supuesto no es que si vas a hornear una torta que te pide 1/2 taza de azúcar le vas a poner 1/2 taza de canela, porque eso debe quedar asqueroso.

Recuerdate que:

El azucar tiene muchos nombres como  sacarosa, almíbar de maíz de alta fructosa, jugo de caña deshidratado, fructosa, glucosa, dextrosa, almíbar, caña de azúcar  azúcar cruda, almíbar de maíz, etc, etc.

Si un alimento empacado contiene azúcar en los 3 primeros ingredientes, evitalo, corre por tu vida.

Toma en cuenta que otras azucares etiquetadas como saludables como miel, azúcar de caña orgánica, agave (aguamiel) y azúcar de coco entran en la misma categoría.


Ya te asuste? Seguro que no, vete, corre y termina de tomarte tu cafecito con leche acompañado de biscochuelo, o tu pedazo de torta de cumpleaños que te dieron para llevar para la casa, se una de esas personas que veo caminar que están obesas y que tiene un niño de 5 años que pareciera que tuviera 10 años que también esta obeso y que los ves caminando con un vaso gigante de cola y comiendo un helado grande y luego se preguntan porque será que no puedo perder peso, y mientras tanto yo me voy a la tienda de Ponquesitos a comprarme un cupcake de chocolate con crema de mantequilla que me va a enfermar, ya que no tengo vesícula, pero valdrá la pena!!!

WHITE BEAN SPREAD / CREMA PARA UNTAR DE FRIJOLES BLANCOS





I have so many recipes to share with you guys only because I've been cooking like crazy.

See, my Grandfather passed away last week and you know how experts say that everyone grieves differently? Well, apparently this time around, I need to cook and clean. I have to move, do something non stop, keep myself distracted, my mind racing, I cannot stop, I don't want to stop because stopping means thinking, thinking means remembering, and remembering means realizing that I lost one of the people I love most in my life, that I will never get to see him, hear his voice, his jokes, see his perfect smile, hear his stories, poems,  and that means crying hysterically.
Maybe avoiding the crying it's not a good idea, but I will worry about that later because right now I am cooking, baking and organizing, which brings me back to what I said that I have lots of recipes to share with you.

I hope you have recuperated from the shock I've caused by telling you about Kidney Beans Poisoning in my last post because I made the most delicious White Kidney Beans Spread and I have to share it with you, it is so good, perfect for afternoon snack, for a party, or something to prepare quickly when you have impromptu house visitors. Trust me , they will be impressed and it is super healthy.


WHITE BEAN SPREAD:

What you need:

1/4 cup olive oil
2 garlic cloves, minced
1 1/2 cups canned white kidney beans, drained and rinsed
1 tbsp (15ml) fresh lemon juice
1 tbsp (15ml) water
1 tsp (5ml) fresh thyme, chopped.
1/2 tsp (2ml) kosher salt
1/4 tsp (1 ml) freshly ground black pepper
1/8 tsp(0.5ml) cayenne pepper
1 tsp tahini (optional)

What to do with it:

In a small skillet, heat the olive oil over medium. Add the garlic and turn off heat immediately. Let garlic sit in oil for 30 seconds and then strain out garlic pieces, reserving the flavoured oil, set aside and let cool slightly, don't discard the garlic. (you want the garlic to stay soft and golden looking, not brown or toasted because if so, it will give the oil a bitter taste).

In a food processor, combine the beans, reserved garlic oil, lemon juice, water, thyme, salt, black and cayenne pepper. Process until smooth, about 20 seconds. Add the tahini and about 1 tsp of the garlic pieces and process a few seconds more. Serve with  pita bread, crackers, fresh bread, naan, fresh cut veggies, etc, the sky is the limit.

Note: You don't need to add tahini to the spread, I did it because I like tahini's nutty flavour but if you don't have any, don't worry about it, it will taste amazing without it as well. Also, I added a bit of garlic pieces because I am a garlic nut, I LOVE GARLIC and can't have enough of it, EVER,  but again, its up to you and your personal taste and don't you dare trowing away that left over cooked garlic. You can use it in salads, spread it on sandwiches, cook with it, remember the flavour it is not too strong because it has been cook, so use your imagination.

Tengo tantas recetas que compartir con ustedes porque he estado cocinando como una loca.

Lo que pasa es que mi abuelo falleció la semana pasada y tu sabes como los expertos dicen que cada quien supera la muerte de un ser amado de manera diferente? pues, aparentemente esta vez me ha dado por cocinar, limpiar y organizar.
Tengo que moverme, hacer algo sin parar, mantenerme distraída, mi mente ocupada, no quiero parar, no puedo parar, porque parar significa pensar, pensar significa recordar y recordar significa realizar que una de las personas que mas amo en mi vida se fue, no veré mas, no escuchare su voz, sus chistes, sus bromas, su bendición, sus historias, sus poemas, ver su hermosa sonrisa, lo que significa llorar histéricamente. Quizás el evitar llorar no es recomendado pero me preocupare de eso luego, por ahora cocino, organizo y limpio. Por eso es que tengo tantas recetas que compartir.

Espero que ya se hayan recuperado del shock de mi ultimo post acerca del envenenamiento causado por el consumo de frijoles rojos y blancos mal cocinados porque les cuento que prepare una crema para untar con frijoles blancos que esta buenísima, perfecta para fiestas o para cuando tienes visitas en la casa inesperadas y no sabes que ofrecer, se prepara demasiado rápido y es súper saludable también.

CREMA PARA UNTAR DE FRIJOLES (CARAOTAS) BLANCAS:

Lo que necesitas:

1/4 taza de aceite de oliva

2 dientes de ajo machacados
1 1/2 tazas de frijoles blancos enlatados, colados y enjuagados
1 cucharada (15ml) de jugo de limon fresco
1 cucharada (15ml) de agua
1 cucharadita (5ml)  de tomillo fresco, picado
1/2 cucharadita (2ml) sal gruesa
1/4 cucharadita (1 ml) de pimienta negra recién triturada
1/8 cucharadita (0.5ml) pimienta de cayena
1 cucharadita de Tahina (pasta de semillas de sesamo)  (opcional)

Que hacer con esto:

En una olla pequeña, calentar el aceite de oliva a temperatura media. Agregar los 2 dientes de ajos y apagar el fuego inmediatamente. Dejar que el ajo se quede en el aceite por 30 segundos, luego colar y poner el aceite aparte para que se enfríe un poco (lo que quieres es que el ajo se ponga cremoso y beige o dorado clarito, no que se ponga marron o que se tueste ya que eso haría que el aceite agarre un gusto amargo), guardar el ajo, no lo botes.

En un procesador de comida combinar los frijoles, aceite de oliva reservado, jugo de limon, agua, tomillo fresco, sal, pimienta negra y de Cayena, procesar por 20 segundos hasta que quede cremoso, luego si quieres agrégale la tahina, el ajo y listo. Servir con pan tostado, pita, naan, galletas de soda, vegetales crudos, etc, las opciones son infinitas.

Nota: La Tahina es opcional, yo se la agregué porque me gusta el gusto que le da pero si no tienes, no te preocupes, igual va a quedar deliciosa sin la misma, al igual que el poquito de ajo, yo le agrego ajo a todo, ADORO El AJO y no me canso de cocinar con el, pero como dije, es opcional y depende de cada quien, y no se te ocurra botar el resto de ese ajito que te quedo cocinado, agrégaselo a una mayonesa, ensalada, un sandwich, pasta, o lo que sea, esta cocinado así que no es tan fuerte pero esta lleno de sabor.
